Recipe Arrabbiata sausage pasta bake Serves 2-3 Ingredients 6 Sausages, spicy or standard 2 tbsp olive oil 1 Garlic clove finely chopped 1 Medium size red chilli de-seeded and finely chopped 1 tbsp Plain flour 1 tbsp Caster sugar 1 tsp Hilli flakes 2 x 400g Can chopped tomatoes 1 tbsp Dried oregano Zest of 1 lemon 30g Butter 20g Plain flour 300ml Whole milk warmed 60g Cheddar cheese grated 200g Penne 1 Handful basil leaves Method 1. Preheat the oven to 180°C, 350°F, gas mark 4. 2. Place the sausages on a baking tray. Cook in the oven for 25-30 minutes or until fully cooked. 3. Use a large frying pan to fry the garlic and chilli in the olive oil for 1 minute. 4. Add the plain flour, caster sugar and chilli flakes and fry for another 30 seconds. 5. Add the chopped tomatoes, dried oregano and lemon zest. 6. Simmer on a low heat for 2 minutes. 7. To prepare the cheese sauce melt the butter in a saucepan. 8. Add the flour and cook for 1 minute. 9. Add the warmed milk gradually and mix until the sauce is smooth, gently bring to the boil to thicken the sauce stirring continuously. 10. Add 40g of the Cheddar cheese, mix well and season to taste. 11. Cook the pasta as per the pack instructions and drain. 12. Slice the cooked sausages into bite size pieces. 13. Mix the cooked penne and sausages with the tomato sauce and mix through the chopped basil. 14. Pour into a heat proof oven dish and cover with the cheese sauce. 15. Sprinkle over the rest of the cheese and a little dried oregano. 16. Bake in an oven for 20 minutes until piping hot. Serve immediately.
