Recipes

Prawn and cherry tomato pasta Serves 3-4 Ingredients 350g Wholewheat fusilli 180g Raw prawns 50g Salted butter 200ml Double cream 20 Cherry tomatoes, halved 1 Handful chopped parsley Zest of 1 lemon 1 Spring onion sliced into rounds 1 Handful fresh basil leaves, shredded Method 1. Cook the pasta as per pack instructions and drain. 2. Sauté the prawns in the butter for a couple of minutes, then add the cream and the tomatoes. 3. Cook for another 4-5 minutes, adding a little more cream or milk if the sauce is too thick, and season to taste. 4. Add the cooked pasta, stir well so the sauce coats the pasta, add the chopped parsley, lemon zest, spring onion and shredded basil. 5. Mix well and serve.
