Tagliatelle with asparagus, crispy pancetta and Parmesan Serves 4 Ingredients 1 Bunch asparagus 1 Tbsp olive oil 12 Thin slices pancetta, sliced into small strips 400g Tagliatelle 100g Parmesan cheese, grated Method 1. Snap the woody bottoms off the asparagus stalks and throw them away. 2. Cut off the top 4cm tip of each stalk, put to one side and finely chop the remaining stalks. In a large frying pan gently fry the chopped asparagus stalks in the olive oil with the pancetta. When the asparagus softens slightly turn the heat off and mash them roughly with the back of a fork. 3. Cook the tagliatelle according to pack instructions. Add the asparagus tips for the last 2 minutes of cooking time. 4. Drain the pasta and toss with the mashed asparagus and pancetta. 5. Stir in most of the Parmesan cheese and season to taste. 6. Sprinkle the remaining Parmesan cheese on top and serve.
