Preparation and Usage
For proper Italian pasta (and why would you want anything else?), add pasta to a large pan of slightly cook for 11 minutes until salted boiling water and al dente. If you like your pasta a little softer, cook for 13 minutes. Drain, smother in sauce and enjoy.

This delicious Penne Amatriciana is a loud-and-proud tomato penne dish with subtle heat. Ingredients: 1 tbsp Napolina Olive Oil , 75g pancetta, diced , 1 red chilli, 50ml white wine (optional), 1 X 400g can Napolina Chopped tomatoes, salt and ground black pepper , 200g Napolina Penne , flat leaf parsley and Parmesan to serve. Serves: 4 Cook Time: 15 mins Method: Heat the oil in a heavy- based frying pan, add the pancetta and chilli (whole), cooking over a medium heat until the pancetta fat begins to bubble, then turn up the heat and cook until golden. Add the wine and bubble until evaporated, then scrape up all the browned juices from the bottom of the pan. Add the tomatoes and seasoning, simmer gently for 10-15 minutes, until slightly thickened. While the sauce is simmering cook the Napolina penne in salted boiling water until al dente. Drain, then stir into the sauce. Serve scattered with parsley and grated Parmesan.
