Preparation and Usage

Recipe Two Pizzas or One Foccacia Bread Pizza bases 250g Pizza and Focaccia bread mix 140ml Water 1. Put 250g of the pizza and focaccia bread mix into a bowl, create a well in the centre, and slowly pour in 140ml of lukewarm water. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough. 2. Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size. 3. Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands - this is called knocking back the dough. You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required. 4. If using straight away, divide the dough up as you want to make pizzas. 5. Top with tomato base and your favourite toppings. For Foccacia Bread, Follow Steps 1 to 3 for Pizza Bases Heat the oven to 220C/fan 200C/gas. Shape the dough into a large circle or rectangle until that the dough is about 1/2 inch thick. Use your fingers to make dimples in the top of the dough then drizzle with the rosemary-infused oil and rosemary leaves, and sprinkle with extra sea salt flakes. Bake for 20 minutes or until golden brown. Cover loosely with foil (this creates a little steam to keep the crust soft) and let it cool. Drizzle with a little more oil before serving, if you like.
