Creamy one-pot tomato orzo with goat cheese

This one-pan dish with goat cheese and tomato orzo is super creamy and mega delicious. You make everything in one pan which means very little washing up and also very little thinking after a busy day. Win-win!

Ingredients (for 4 people):

1 onion

Half a red pepper

250 g cherry tomatoes

1 tbsp olive oil

1 tsp. fennel seeds

400 g can of chopped tomatoes with Italian herbs

300 g orzo (pasta)

500 ml vegetable stock (made up from cube)

125 g Bettine mild goat's cheese plain slices

15g fresh basil

Ground black pepper

Preparation:

1. Dice the onion. Dice the red pepper. Halve the cherry tomatoes.

2. Heat the oil in the pan and fry the onion for 2 min over medium-high heat. Add the red pepper and fennel seeds and fry for 1 min.

3. Add the cherry tomatoes and fry for 2 min.

4. Add the chopped tomatoes, orzo and stock, stir well. Bring to the boil again. Cook for 10 min, or until the pasta is tender.

5. Finely chop half the basil. Crumble in the goat cheese. Stir the finely chopped basil and half the goat cheese into the orzo.

6. Serve the pasta in a deep plate. Garnish with the rest of the goat cheese and basil leaves. Season generously with freshly ground pepper.
