Recipes

Rice & Peas - Serves 2 1 pouch Long Grain Rice, 2 tbsp sunflower oil, 1 finely chopped onion, 100ml coconut milk, 1 tin kidney beans, 2tbsp fresh thyme, coriander. Method: Heat the oil in a frying pan and fry the onion until soft. Add the rice from the pouch and stir well; add coconut milk and heat through. Add the kidney beans and thyme and cook for a further 10 minutes. Season and serve with coriander to garnish.
