Red Wine Marinade 2 Spring Onions (finely chopped) 6 Peppercorns 150ml (1/4pint) Dufrais Cabernet Vinegar 150ml (1/4pint) Olive Oil 300ml (1/2pint) Dry Red Wine Mixed Herbs to taste Mix all the ingredients together in a large bowl, then use to marinate either beef, lamb or chicken. Makes enough to marinate 900g (2lb) meat. Try adding other flavouring ingredients such as mango chutney, mustard, sun-dried tomatoes or garlic.
