Recipes

Sweet Short Crust Pastry Ingredients 500g Neill's Golden Fleece Plain Flour 100g Icing Sugar 250g Butter, Cubed 2 Large Eggs, Beaten 30ml Milk Method 1. Sieve the flour and icing sugar into a large clean bowl. Rub the cubes of butter into the flour and sugar until you end up with a fine, crumbly mixture. 2. Add the eggs and milk to the mixture and gently work it together till you have a ball of dough. Flour it lightly. 3. Be careful not to over handle the pastry as it will become elastic and chewy, not crumbly and short. 4. Turn the pastry onto a lightly floured work surface, pat it into a round, lightly flour it, wrap it in cling film and put it into the fridge to rest for at least half an hour. 5. Once chilled the dough can be kept in the fridge until ready to use. Delicious for apple cakes, sweet mince pies and lemon tarts. Makes 1 Crust, Time: 40 mins
