Recipes
Thai Green Turkey and Potato Curry 500g cooked turkey cut into small pieces 3/4 can coconut milk 1 tsp grated lime zest 1 red pepper, seeded and cut into pieces 4 cooked roast potatoes cut into pieces 1 tbsp Thai green curry paste Vegetable oil for frying 1. Warm a large frying pan over medium-high best. Add the vegetable oil, then add the Thai green curry paste. 2. Stir fry for around one minute then add the coconut milk and reduce by one third. 3. Add the turkey, stirring to incorporate. When the curry sauce comes to a boil, reduce heat to medium or medium-low, until you get a nice simmer. 4. Add the red pepper and potatoes, plus lime zest. 5. Simmer for a further 2-3 minutes, or until the vegetables start to soften. 6. Serve with Jasmine rice and garnish with fresh coriander leaves.
