Enjoy your baking with Jack's. Preparation guidelines You will need: 2 medium eggs; 100ml (7 tbsp) water 2 x 20cm (8 inch) greased and lined round cake tins or 12 cupcake cases and a cupcake or muffin tin. Sponge cake method: - Pre-heat the oven to 190℃/fan 170℃/gas mark 5. - Empty the sponge mix into a mixing bowl and add the eggs and water. - Mix with an electric whisk for 2 minutes until smooth. - Divide the mixture equally into the tins and bake in the centre of the oven for 15-20 minutes until well risen and golden brown. - Remove from the oven and allow to cool in the tins for 5 minutes before turning out onto a cooling rack. Cupcake method: - Pre-heat the oven, as above. - Place the cupcake cases into a cupcake or muffin tin. - Follow instructions as per points 2 & 3 above. - Divide the mixture equally between the cupcake cases and bake in the centre of the oven for 15-18 minutes until well risen and golden brown. - Remove from the oven and allow to cool for 5 minutes before transferring to a cooling rack.
