Whilst Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character.
Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types : American bourbon barrels, Spanish sherry butts, and Spanish Malaga casks.
The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Limited quantities of Yellow Spot have been bottled making it a whiskey to savour.
Nose: Mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks.
Taste: Honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak.
Finish: Sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.

Suggested cocktail serving: Apollo Sunrising Ingredients 45ml Yellow Spot 12 Year Old Irish Whiskey 20ml Grenadine syrup Ice cubes 5 orange twists 1 sugar cube Method 1. Combine the whiskey, grenadine syrup and orange twists in an old-fashioned glass containing a few ice cubes. 2. Soak a sugar cube in scotch and place it on a fork balanced across the top of the glass rim. 3. Light the sugar cube aflame and place it in the cocktail.

Our Single Pot Still family of Spot whiskeys find their roots in Mitchell & Son, one of Ireland’s last remaining Wine Merchants and Whiskey Bonders. The Spot Whiskeys go back to the days when Jameson’s distillery would sell their new make spirit to bonders who matured them in wine and fortified wine casks. It was then that Mitchell & Son developed a reputation for creating some of the finest Single Pot Still Irish Whiskey to be found in the capital. The Mitchells matured their whiskey in casks under the streets of Dublin in their network of underground cellars. When their fortified wine casks were filled exclusively with Jameson spirit from the old Bow St. Distillery, they were marked with a daub or ‘spot’ of paint which identified how long the barrels would be matured for. Blue for 7 years, Green for 10 years, Yellow for 12 years and Red for 15 years—hence the name Spot Whiskey.
