Recipes
Recipe: Steak and Ale Pie - 320g ready rolled puff pastry - 700g braising steak - 2 tablespoons sunflower oil - 500g shallots, peeled - 250g button mushrooms - 2 tablespoons plain flour - 2 tablespoons Worcestershire sauce - 2 tablespoons tomato purée - 500ml real ale - 400ml beef stock - 1 tablespoon demerara sugar - 1 egg - Salt and freshly ground black pepper 1. Cut the braising steak into bite-sized cubes. Heat the oil in a large flameproof casserole dish and fry the meat until evenly browned all over. Add the shallots and mushrooms to the pan and cook for a further 5 minutes, stirring. 2. Sprinkle with the flour and stir well. Cook for 2 minutes. 3. Mix together the Worcestershire sauce, tomato purée, ale, stock and sugar and pour over beef. Season to taste. Bring to the boil, stirring, and cook on a high heat for 5 minutes. Reduce heat and cook, covered, for 1 hour 15 minutes, stirring occasionally. Remove the lid for the final 15 minutes of cooking time. 4. Remove the puff pastry from the fridge 10-15 minutes before required. Pre-heat the oven to 200°C/400°F/Gas Mark 6. Unroll the pastry and cut off some thin strips. Transfer the filling to a clean family size casserole dish. 5. Beat the egg with a little water and brush over the rim of the casserole dish, press thin strips of pastry around the rim then lift the pastry lid on top, pressing down well to seal. Use any trimmings to cut out pastry leaves to decorate the pie and brush with beaten egg. Make two small slits in the top of the pie to allow steam to escape. Bake for 35-40 minutes until pastry is golden and puffed up.
