Preparation and Usage

Makes 1 loaf cake Cranberry Carrot Cake Ingredients - 100g cranberries - Zest & juice of 1 orange - 100g sugar - 2 eggs - 80ml vegetable oil (plus extra for greasing) - 200g Mortons Self Raising Flour - 3 teaspoon mixed spice - 200g carrots (grated) - 100g toasted chopped nuts - Topping: 150g white chocolate, 200g low fat cream cheese, 1 teaspoon mixed spice Method 1. Preheat the oven to 180°C or Gas mark 4. Mix the cranberries, zest and juice of the orange in a bowl and heat in the microwave for 2 minutes. 2. In a mixing bowl, whisk the eggs and sugar to a thick foam, continue to whisk while gradually drizzling in the oil. 3. Mix the flour, mixed spice, carrot and nuts in a separate bowl. Fold in the foam and cranberry mixtures to form a thick batter. Bake in a greased 2lb loaf tin for 35 minutes. 4. Melt the chocolate and beat in the cream cheese. Spread across the top of the cooled cake and lightly dust with mixed spice. Flour is a raw ingredient and must be cooked or baked before eating.
