The exceptional flavour of these Kippers is the result of a dedication to the traditional art and craft of curing and smoking seafood, a process perfected by the Carr family over four generations. These herring are harvested from the Atlantic Ocean and using a process unique to William Carr, are hand cured and then kippered (smoked) over beech wood sourced along the river Blackwater to create a delicately flavoured moist kipper unsurpassed in texture and taste..
