It's shaped with a traditional bronze die for a slightly roughened texture which holds more sauce, then slowly dried to preserve the delicate flavour of the wheat. Mezzi Rigatoni is typically used in Italy with ragu, tomato sauces or in baked pasta dishes.

Mezzi rigatoni al forno serves 4 Ingredients: - 12 Beef meatballs - 1 1/2 Tbsp olive oil - 1 Large onion, finely chopped - 1 Tsp chilli flakes - 1 Tsp dried oregano - 1 Tbsp smoked paprika - 2 Red peppers, finely chopped - 2 x 400g Cans chopped tomatoes - 300g Mezzi rigatoni - 75g Grated mozzarella. Method 1. Preheat the oven to 200°C/fan 180°C/Gas 6. 2. Fry meatballs in 1 tbsp of the oil on a high heat for 3-4 mins, until browned, remove and set aside. 3. Reduce the heat and add the rest of the oil, the onion and chilli flakes, oregano & paprika and fry for 10 mins, until the onion starts to soften. 4. Add the peppers and cook for another 5 mins. 5. Stir in the tomatoes, meatballs and 200ml water. 6. Simmer for 15-20 mins, until the sauce has thickened and the meatballs are cooked through. 7. While the sauce is simmering, cook the pasta according to the pack instructions. 8. Drain and tip into an ovenproof dish. 9. Pour the meatballs and the sauce over the pasta and stir to coat. 10. Scatter over the mozzarella, then bake in the oven for 15 mins, until the cheese is melted and golden.
