Orzo with Halloumi Serves 2 Ingredients: - 160g orzo - 1/2 tsp. turmeric - 2 1/2 tbsp olive oil - 1 clove garlic, crushed - Juice of 1 lemon - 60g Halloumi, thinly sliced - 1 tsp. honey - 125g Piccolo tomatoes, halved - 1/2 cucumber, chopped - 1/2 red onion, diced - 60g Queen olives chopped - 1/2 tsp oregano - Handful flat leaf parsley roughly chopped - Handful flat leaf mint roughly chopped Method 1. Cook Orzo to pack instructions with the turmeric added to water. 2. Drain & mix in 1½ tbsp of the olive oil the garlic and half the lemon juice, leave to cool for a moment. 3. Meanwhile, heat the remaining oil in a frying pan and fry the Halloumi for 2-3 mins on each side, until lightly golden. Once golden add in honey and remove from heat. 4. Mix together the tomatoes, cucumber, onion, olives, oregano, parsley and mint. Then sprinkle in the remaining lemon juice. 5. Divide the Orzo and salad between 2 bowls, and top with the Halloumi.
