Hey Amigo... Let's make some Excellent Enchiladas! Preheat oven 200°C / 392°F / Fan 180°C / Gas Mark 6. 1 Get Cookin' Cut 500g of chicken, 2 peppers and 1 onion into thin strips. Heat 2 tbsp vegetable oil in a large frying pan until piping hot. Add the chicken and stir-fry for 6-8 mins until thoroughly cooked. Add the veg into the pan and continue to cook until they begin to soften. In a large measuring jug add 100ML hot water, both sachets of tomato sauce and the seasoning sachet, stir until all combined. Add half the jug contents to the frying pan, add 50g of grated cheese and stir through until everything is combined. Remove the frying pan from the heat. 2 Fill 'Em, Heat 'Em Spoon the cooked chicken and veg onto the centre of the tortillas and roll them up. Place the tortillas fold down onto a lightly greased baking dish. Pour over the remaining enchilada sauce and sprinkle over 100g of grated cheese. Bake in the oven for 10 mins. 3 Final Flourish Top your feast off with a sprinkle more cheese and cooling sour cream for the ultimate enchilada experience!
