Preparation and Usage

Filo Pastry Tips Let your pastry temper to a room temperature For best results, take the pastry out of the fridge approximately 20 minutes before you are ready to use it, as it will be easier to work with. Do Not Overfill Don't be tempted to overfill your filo parcels as they could leak during cooking, which might prevent your pastry from crisping up. If You Have Some Filo Pastry Sheets Left Leftover filo pastry can be wrapped in cling film and frozen for up to a month. Defrost completely before using. 1. Take out the fridge and remove from the carton approximately 20 minutes before use. After this time, for best results use immediately. 2. Remove from plastic wrap and unroll pastry sheet. 3. Bake in a preheated oven at 200°C (180°C for fan assisted ovens)/Gas mark 6, or at the temperature required in your recipe. 7 Chilled uncooked filo pastry sheets. This product is raw and requires cooking. Small black spots may be present in the pastry. This is bran which is naturally occurring within the flour and will disappear during cooking.

Storage

Keep refrigerated below 5°C. Home freezing: Freeze on day of purchase. Consume within 1 month. To defrost thaw overnight in your fridge or alternatively for approx. 1 1/2 hours at room temperature. Once thawed do not refreeze.

Ingredients 6 Jus-Rol™ filo pastry sheets, unwrapped and covered with a damp tea towel 250g Ricotta cheese 50g Ground almonds 25g Citrus peel, chopped 1 Tsp caster sugar 1 Tsp orange zest, grated 100g Butter, melted Icing sugar to dust Method 1 Preheat the oven to 180°C (160°C in a fan oven) Gas mark 4. 2 Place the ricotta cheese in a bowl with the almonds, citrus peel, sugar and zest. Mix together until eventy blended. 3 Place 6 sheets of filo pastry on a board. Cut into a rectangle 40cm x 20cm (8inx 16in) then cut in half across the width, to make 20 cm (8 in) squares. Cover with a damp tea towel. 4 Lay 2 filo squares on the board, brush with melted butter and lay the second sheet on top, brushing well with butter. 5 Divide the filling into 6 portions and place one portion in the centre of the pastry. Draw all the corners into the centre including the sides, to create a purse shape. Press well together to seal. Open out the top leaves of pastry and brush all over with butter. Place on the buttered baking tray. 6 Repeat to make 5 more purses, space evenly apart on the baking tray and bake in the preheated oven for 15 minutes or until golden brown. Make sure the tops do not over brown. 7 Cool on a wire rack and dust with icing sugar.
