Tiramisù Ingredients for 6/8 servings: 500 g mascarpone cheese - 250 g Balocco Ladyfingers - 5 eggs - 60 g sugar - 5 cups of coffee (diluted with milk) - Cocoa powder - Dark chocolate if liked - 1 pinch of salt. Preparation: Make the coffee and leave it to cool in a large bowl. Dissolve in it a tablespoon of sugar (10 g) and add two tablespoons of milk (to taste). Separate the egg yolks from the whites in two separate bowls. Whip the yolks with 50 g of sugar with an electric whisk to make a very frothy, pale mixture. Add the mascarpone to the egg yolks and sugar mixture, mixing thoroughly with the whisk. Separately, whisk the egg whites with a pinch of salt until stiff. Add the egg whites to the mascarpone cream, stirring from the bottom upward so that they do not lose their stiffness. If preferred, only 3 whites may be used. Soak the ladyfingers in the coffee and arrange them on the bottom of a dish. Make up the tiramisù by alternating layers of the cream with layers of coffee-soaked ladyfingers. Decorate with cocoa powder and flakes or curls of dark chocolate. Handy single portions can also be prepared in individual glasses. Pasteurised eggs should be used for this recipe.
