Preparation and Usage

Rehydration instructions: 1. Bring a large pan of water (around 500ml) to the boil over a medium to high heat. 2. Add the dried country vegetables to the boiling water, reduce the heat to low and simmer for 10 minutes. 3. Drain well and use as required. Suggested uses: Great Scot Dried Vegetables are so versatile and delicious in many dishes. Why not try adding to casseroles, stews, soups and sauces. Alternatively, rehydrate according to the on pack instructions and use in savoury rice, risottos and paella or as a topping for pizza.

Storage

Store in a cool dry place. Once opened, store in an airtight container. Best before end: See top of pack.

Chicken, Leek & Cider Casserole Serves 4 Preparation time: 10 minutes Cooking time: 55 minutes Ingredients: 1 tbsp vegetable oil 6 boneless chicken thighs, diced 2 medium leeks, trimmed and sliced 500ml dry cider 50g Great Scot Dried Country Vegetables Salt and black pepper 2 tsp cornflour 2 tsp cold water Method: 1. Heat the oil in a pan, fry the chicken for 4-5 minutes until browned. Add the leeks and fry for a further 2-3 minutes. 2. Stir in the cider and dried vegetables, bring to the boil and then cover and simmer for 40-45 minutes until the chicken is thoroughly cooked. 3. Season to taste and then mix the cornflour into the water until smooth, stir into the casserole and cook for a further 5 minutes before serving with steamed vegetables.
