Recipes

Medium Chicken Curry Ingredients 3 tbsp. vegetable oil, 1 medium onion, peeled, halved and finely sliced, 4 cloves garlic, peeled and crushed, 4 heaped tbsps. Co-op Medium Curry Powder, 400g can chopped tomatoes, 15g tomato purée, 4 chicken breast, diced, 200 ml water, 150ml single cream. Serves 4 Method 1. Heat the oil in a large, non-stick saucepan on a low heat. Add the onions and garlic and cook until soft and lightly coloured, stirring occasionally. 2. Add the Medium Curry Powder and dry for 2 minutes, stirring constantly. Add the chopped tomato purée and bring to a simmer. 3. Add the chicken, water and single cream, cover and simmer for 20 minutes or until the sauce has thickened and the chicken has cooked through. Season the taste. Serve with basmati rice and chopped coriander. Vegetarian Option Swap the chicken breast for a can of drained chickpeas, diced baby potatoes and spinach.
