Preparation and Usage
Preparation Guidelines Thinly peel or scrape off the skin. Grate, slice or chop the flesh as desired and use in Chinese or Indian cooking, or include in cakes, puddings and desserts. Top Tip Blend your (ginger, garlic, chillies) with a little oil and use the paste to liven up your curry or pasta sauce.

Fresh ginger often ends up wrinkled and dry in the salad drawer of the fridge. The best way to keep it is to cut it into manageable chunks then peel it. Put the chunks into a polythene bag and freeze them. Ginger is much easier to grate from frozen than it is from fresh.
