Chocolate Mousse 200g Co-op dark chocolate 4 fl oz warm water 3 large eggs, separated 40g Co-op dark brown sugar 1. Place the broken up chocolate and 4 fl oz water in a large heatproof bowl, which sits over a pan of barely simmering water. 2. Keeping the heat at its lowest, allow the chocolate to melt slowly, approx. 5 minutes. 3. Remove from the heat and stir well until glossy. Cool the chocolate for 2-3 minutes. Beat the egg yolks and sugar together and stir into the chocolate mixture. 4. In a clean bowl, whisk the egg whites to soft peak stage. Using a metal spoon, fold the egg whites into the chocolate mixture, slowly and carefully. 5. Pour the mousse between 4 glasses and chill for at least 2 hours. 6. If desired, top with whipped cream and chocolate curls. Tip: To make a layered mousse, melt 100g white chocolate, then fold in 1 whisked egg white. Pour into the base of each glass. Set and chill then top with brown mousse.
