Hot Beef Curry Ingredients 2 tbsps. vegetable oil, 1 large onion, peeled, halved and finely sliced, 1 red pepper, deseeded and cut into chunks, 1 green pepper, deseeded and cut into chunks, 4 cloves garlic, peeled and crushed, 4 tbsps. co-op Hot Curry Powder, 500g beef, diced, 400g can chopped tomatoes, 15g tomato purée, 400ml water. Serves 4 Method 1. Heat the oil in a large, non-stick saucepan on a low heat. Add the onions, peppers and garlic, cook until they are soft, stirring occasionally. 2. Add the Hot Curry Powder and beef and fry for 2 minutes or until the beef is browned, stirring constantly. 3. Add the chopped tomatoes, tomato purée and water. Bring to a simmer and cook for 20 minutes or until the sauce has thickened and the beef is cooked through. Season to taste. Serve with basmati rice and chopped coriander. Vegetarian Option Replace the diced beef, with aubergine chunks and red lentils.
