Mediterranean pasta salad Serves 4 Ingredients 350g farfalle 2-3 Red onions, peeled and cut into wedges 3 Courgettes, cut in half length ways 1 Large aubergine, cut into thick slices 1 Red and 1 yellow pepper, deseeded and cut into quarters 3 tbsp olive oil To serve: Extra virgin olive oil to drizzle 100g mozzarella, cut into pieces 1 handful basil leaves, torn Method 1. Cook the pasta as per the pack instructions and drain 2. Preheat the grill to a medium heat. 3. Toss each of the vegetables in olive oil and season. 4. Grill the peppers first. Grill until the skin becomes charred. Remove, peel off the skin, cut into strips and set aside. 5. Grill the remaining vegetables until soft and crisping at the edges. Remove and cut the aubergine and courgettes into chunks. 6. Stir the vegetables through the cooked pasta. Drizzle with the extra virgin olive oil. 7. Serve topped with mozzarella and torn basil.
