Easy Raspberry & Lemon Eton Mess Ingredients 600ml Co-op Double Cream 15g Co-op Granulated Sugar 300g Co-op Raspberries (washed) 60g Co-op Irresistible Lemon Curd 8 Co-op Meringue Nests Method 1. In a glass bowl, mix the cream and sugar together until soft peaks form. 2. Fold in the raspberries (keep some back for decorating) and lemon curd. 3. Break the meringue nests into the bowl and mix with a large spoon. 4. Divide the mixture into serving glasses and top with whole raspberries.
