Gujarati Dal Serves 4 Ingredients 228g Natco oily toor dal; 114g yam, chopped; 2 tbsp peanuts; 2 tbsp Natco butter ghee; 1/4 tsp Natco cumin seeds; 1/2 tsp Natco asafoetida; 3 plum tomatoes, chopped; 1 tsp Natco ginger paste; 1/2 tsp Natco chilli powder; 1/2 tsp Natco turmeric powder; salt to taste; 1 tbsp Natco jaggery goor; juice of 1/2 lemon; 4 tbsp coriander, chopped. Method Wash and drain the dal. Place in a saucepan and add 750ml of water, the peanuts, yam and salt to taste. Bring to the boil, reduce heat and simmer for 15 mins. Meanwhile, heat the ghee in a small pan and fry the cumin seeds till brown. Add the asafoetida, tomatoes, ginger, chilli powder and fry for 2-3 mins. Add to the dal mixture, stir well and simmer gently until the grains and vegetables are soft and cooked. Add a little extra water as necessary. Finally, add the lemon and jaggery and stir well. Serve garnished with chopped coriander.
