Recipe idea: Bharve Aloo Baingan (Serves 4) 1. Make slit 10 baby aubergines lengthways. 2. Combine 1tbsp Patak's Kashmiri Masala Paste, 10tbsp chick pea flour, 1 tbsp ginger paste, 5 tbsp chopped coriander, 1tsp salt, 2tbsp desiccated coconut, 2tbsp ground peanuts, 1/2 tsp turmeric, 1 1/2tbsp oil & mix. 3. Stuff each aubergine with this mixture. 4. Heat 7tbsp oil in a wok, crackle 2tsp mustard seeds, 1/8tsp asafoetida. 5. Add stuffed aubergines, 10 baby potatoes, 1/2 tsp sugar & 1/2tsp salt. Cover & cook for 20-25 mins. 6. Uncover, add remainder of stuffing & cook for 8 mins.
