Shopping List 1 onion 2cm piece of ginger 2 garlic cloves 200g set yogurt 4 chicken thighs 3 tbsp tomato purée 800g cooked Basmati rice Fresh coriander Fresh mint Hearty Chicken Biryani for 4 1 Fry diced onion in 5 tbsp of oil until soft and add the finely chopped ginger and garlic with 1/2 a jar of spice paste and 50ml water. Cook until evaporated. Remove from the heat, ripple through the yogurt and loosen with a further 100ml water. Add the diced chicken and tomato purée. Cook uncovered for 20 mins until the chicken is cooked through. 2 Layer the biryani in a large casserole dish, covering each layer with cooked basmati rice. Ensuring the final layer is rice, garnish with chopped coriander and mint. Cover with aluminium foil and the lid and cook for 45 mins at 180°C until piping hot. Swap chicken for 400g of jackfruit for a veggie alternative.
