British Grown... The Williams family have been growing wheat in Hertfordshire since 1927. Started by David Williams the farm is now run by Ron and Glyn and the third generation Brian, Howard and Adrian. The farm grows several soft wheat varieties such as Consort and Claire on fertile 'moisture trapping' London Clay. This grain is ideal for making the perfect Plain and Self Raising Flours. The wheat is grown, harvested, stored and transported less than eight miles to the mill under strict standards of hygiene and food safety that are assured from an independent assessor. ...And Milled The Wright's family mill has been making fine flours since 1867. Located at Ponders End in London, the mill dates as far back as the Doomsday Book of 1086. Founded by George Wright and handed down over 5 generations, G.R. Wright & Sons Ltd is now run by great, great grandson David. Recipe Suggestion Mrs Wright's Shortbread (Makes 6 wedges) Ingredients: 100g (4oz) Butter (softened), 50g (2oz) Caster Sugar, 175g (6oz) Plain Flour, Caster Sugar to sprinkle. 1. Using a mixing bowl, beat together the butter and caster sugar with a wooden spoon or an electric whisk until light and creamy. 2. Sift the plain flour over the creamed mixture and mix in with the wooden spoon until well combined. Bring the mixture together with your fingertips to form a smooth dough. 3. Sprinkle a little flour over the work surface. Roll out the dough to an 18cm (7'') round. Then place onto a baking sheet, crimp the edges by hand and prick with a fork to make a pattern on the shortbread. Using a sharp knife, cut into 6 wedges and chill for 1 hour. 4. Preheat oven to 170°C (325°F) Gas Mark 3. Remove from the fridge and bake for 30 minutes, or until the shortbread is cooked with a pale golden colour. Remove from the oven and re-cut the wedges. Finally sprinkle with caster sugar. 5. Leave the biscuits to cool on the baking sheet for about 20 minutes, then transfer to a wire rack to cool completely.
