Recipe Suggestion Fish & Seasonal Veg Thai Yellow Curry Serves 2-3 as part of a main meal Kit contains: Yellow curry paste Coconut milk Thai spices You will need: 300g fish or tofu And/or 300g of vegetables (we used baby sweetcorn and green beans) 1tbsp oil 1. Heat the oil in a deep frying pan. 2. Add contents of Yellow Curry Paste sachet, the sachet of Thai spices and 1tbsp of coconut milk and mix until the aromas are released (3 mins). 3. Add the fish/tofu, stirring to coat with the paste (about 3 mins). 4. Stir in the rest of the coconut milk and vegetables and simmer until ingredients are cooked (about 5 mins). The sauce should not be too thick. Garnish with fresh Thai basil or coriander and a squeeze of lime. Serve with Rice Noodles or Rice.
