Spicy Mixed Vegetables Serves 4 1 lb mixed vegetables; 3 tbsp Natco Butter Ghee; 1 medium onion, chopped; 14 oz Natco Chopped Tomatoes; 2 tbsp coriander leaves, chopped; 3 tbsp grated coconut; 1 tsp each of Natco Chilli Powder,Turmeric Powder, Coriander Powder,Cumin Powder, Mustard Seeds, Cumin Seeds, Garam Masala; Pinch of Asafoetida (Hing); Salt to taste. Method: Heat the ghee in a saucepan then add Cumin Seeds, Mustard Seeds and Asafoetida. When the seeds start to pop add the onion and fry until lightly brown. Mix in the remaining spices and vegetables. Cover and cook for 12 minutes until tender. Garnish with coriander leaves and grated coconut. Serve with Natco Basmati Rice or chapatis.
