Potatoes Roasted with Olive Oil and Bay Leaves Ingredients 8 Medium sized Maris Potatoes 1/2 cup olive oil 40 small bay leaves 1 tablespoon Fudco Himalayan Salt Fine 2 teaspoons herbs de Provence 1 1/2 Teaspoons Fudco coarsely cracked black pepper Preparation Preheat oven to 350°F / 180°C. Wash potatoes thoroughly, leaving the skin on. Slice all the potatoes about 1cm thick. Place the potatoes evenly in a large baking dish, pouring 1/4 cup of olive oil on top and ensuring all the potatoes are coated. Place a small piece of bay leave between each potato slice. Mix the salt, herbs and the pepper in a small bowl and sprinkle over the potatoes. Place in the pre heated oven for 55 - 60 minutes until tender. Take the dish out, pour the rest of the oil over the potatoes evenly, just tossing them slightly. Place back in the oven for another 10-15 minutes until golden brown and its ready to serve. Serves 6 People
