Holidays in the Middle East are incomplete without date cookies also called "kaak" in Egypt, "maamoul" in the levant and "kombe" in Southern Turkey. Tradition has it that these cookies go back to ancient Egypt which explains their shape but were popularised in the 13th century by Mameluk sultan Baibars of Egypt and Syria.
