Recipe Suggestion Moong Chana Salad with Toddy Vinegar A salad of assorted lentils and salad vegetables lightly toasted in a Goan dressing. Vegan. Serves 4 50g White Pearl Black-Eyed Beans, cooked 50g White Pearl Chick Peas, cooked 50g White Pearl Green Moong Dall, cooked 50g White Pearl Black Urid Dall, cooked 10 cherry tomatoes, quartered 1 large pink onion, thin 1 inch long slices 1 ripe mango, 1 cm cubes 1 teaspoon cracked black peppercorns 1/2 cupful fresh coriander leaves 1 bag green leaf salad, chopped salt Mix everything together in a bowl. Goan Dressing Make many servings. 150 ml bottle rice vinegar 30ml olive oil 2 teaspoons fennel seeds, roasted ground Simply combined everything in a screw bottle. Shake well and sprinkle some onto the salad. Please note, this dressing improves as it matures, and will keep indefinitely.
