Recipes
Nigerian Moyin Moyin Serves 4-6 Ingredients: 2 cups Tropical Sun Peeled Beans; 1 medium red pepper, chopped; 2 tbsp tomato paste; 2 medium sized onions, cut into quarters; 500ml water; 1 scotch bonnet chilli (optional), deseeded; 4 tbsp Tropical Sun Palm Oil or Tropical Sun Vegetable Oil; 1 x 400g tin Tropical Sun Mackerel in Brine, drained; 2 hard-boiled eggs (optional), shell removed and sliced in rounds; 1 cup fish or chicken stock made from Tropical Sun Fish or Chicken Stock Cubes; salt to taste; aluminium foil or banana leaves; 500ml water. Preparation: Place the Tropical Sun Peeled Beans in a bowl and cover with water. Soak for about 30 minutes. In a liquidiser, blend the beans with the pepper, tomato paste and onions. Add up to two cups of water while blending. The mixture should be thick and smooth so gradually add the water to ensure that the mixture does not become runny. Transfer the mixture into a mixing bowl and mix continuously for about 3 minutes. Add the stock and mix well. Taste for salt and add a little if required. Add 4 tbsp of palm oil or vegetable oil (you may add more or less as preferred). Mix continuously again for 2-3 minutes. Place 6 tbsp of the mixture onto a sheet of aluminium foil or in a banana leaf. Add 1 tbsp mackerel and one slice of boiled egg into the middle of the mixture. Wrap the Moyin Moyin completely in the foil or in the banana leaves and ensure there are no gaps. Repeat until you have used all of the mixture. Put 2 cups of water in a pot, then arrange the parcels of foil or banana leaves in the pot. Cover the pot and bring the water to the boil. Reduce heat and let simmer for 30 minutes. Serve hot or cold. Enjoy!
