Blackeye beans with Wild Rice and Herbs Serves 6 Ingredients: 200g Tropical Sun Blackeye Beans; 225g cooked wild rice; 225g cooked Tropical Sun Long Grain Rice; 1 large diced tomato; 1 diced capsicum; 100g whole kernel corn; dressing: 3 tbsp fresh chopped oregano; 1 1/2 tbsp fresh chopped thyme; 2 tbsp white wine vinegar; 3 tbsp extra virgin olive oil; salt and Tropical Sun Ground Black Pepper to taste. Preparation: Cook the Blackeye Beans as directed in the cooking instructions and let cool. Prepare dressing by whisking together oregano, thyme, white wine vinegar, olive oil, salt and pepper. Set aside. On a platter, mix white and wild rice, tomato, capsicum and corn. Add Blackeye Beans. Add dressing and mix. Season with salt pepper. Garnish with fresh herbs.
