Coconut Macaroons Makes 18 Ingredients 14oz can of sweetened condensed milk; 2 tsp vanilla extract; 1 tbsp water; 457g Natco medium desiccated coconut. Method In a bowl combine the vanilla, water and condensed milk and stir well. Add the desiccated coconut and mix thoroughly. Allow this mixture to stand for 2 to 4 hrs, stirring occasionally, to allow the coconut to rehydrate. With a spoon, scoop out and form 2 1/2 cm diameter cookies from the mixture and place on a sheet of grease-proof paper. Place on a baking tray and bake at 350°F/177°C/Gas Mark 4 for about 12-14 mins until golden brown. Remove from the oven and slide onto a wire rack to cool before serving.
