Shopping List 100g dried lentils 1/4 tsp ground turmeric 1 onion 2cm piece of ginger 3 garlic cloves 200g chopped tomatoes 50g butter 100g baby leaf spinach The classic spinach dhal for 4 1 Place the lentils and turmeric in a pan with 800ml cold water, bring to the boil and simmer for 20 mins skimming off any excess froth. Fry diced onion in 2 tbsp of oil until soft, add the finely chopped ginger and garlic with 1/4 a jar of spice paste and sizzle to release flavours. Cook for 2 mins, add 50ml water and cook until evaporated. 2 Add the chopped tomatoes with the butter and cook for 5 mins. Add the lentils to the pan with the spinach and cook for a further 5 mins until the spinach has wilted. Try adding 1/2 a butternut squash, peeled and diced, to the simmering dhal.
