Shopping List 1 onion 2cm piece of ginger 2 garlic cloves 3 chicken breasts 300g chopped tomatoes 1 small handful of cashew nuts 1 small handful of raisins 100ml single cream Fresh coriander Authentic Kashmiri Chicken for 4 1 Fry diced onion in 2 tbsp of oil until soft. Add the finely chopped ginger and garlic with 1/2 a jar of spice paste and sizzle to release flavours. Cook for 2 Mins, add 50ml water and cook until evaporated. 2 Add diced chicken and sear, followed by the tomatoes, cashew nuts, raisins and loosen with 100ml water. Simmer uncovered for 10 Mins until the chicken is cooked through. Ripple through the cream with 1 tsp sugar. Garnish with fresh coriander to serve. Try with 1/2 a butternut squash and add a handful of spinach to the simmering sauce.
