Recipes
Ila and Iyan Serves 4-6 Ingredients: 2 tbsp Tropical Sun Palm Oil, 500g beef (alternatively use fish or goat meat); 1 large onion, sliced; 750ml water or meat stock; 6 okra, thinly sliced; 3 tomatoes, chopped; 1/2 tsp ground red pepper; salt and Tropical Sun Ground Black Pepper to taste; 100g Tropical Sun Poundo lyan. Preparation: Cut beef into small cubes. In a saucepan, heat palm oil. Add beef and a few onion slices. Cook for 10 minutes. Add salt. Add water or stock and bring the mixture to the boil. Simmer for 30 minutes. Add the okra, tomatoes and the remaining onion. Cook until the okra and tomatoes are soft. Remove the okra and tomatoes from the soup and grind or mash them. Then remove their skin and seeds. Sieve pulp and return to soup. Season with red pepper, salt and ground black pepper. Simmer for 20 minutes or until the meat is completely cooked. While the meat is simmering, prepare the lyan by following the cooking instructions above. Serve the lla (okra soup) with the lyan on the side.
