Easy to Cook Hard to Resist! Paya Curry© Spicy Hooves Curry Ingredients Required / Quantity & Preparation Hooves/Payas Goat, 6-8 or Cow, 1 washed in hot water & chopped Onion large 1 finely sliced/100g Ginger Paste 1 tablespoon Garlic Paste 1 1/2 tablespoons Yogurt 1 cup whipped/200g Ghee/Oil 1 cup/175g Shan Paya Curry Mix One packet (use less for mild hot) Steps of Cooking 1. In 8 glasses of boiling water add hooves, half sliced onion, ginger, garlic and Shan Paya Curry Mix. Cook on low heat until the hooves are tender (4-6 hours). 2. Then heat the ghee and add the remaining half sliced onion. Fry until golden. Add the yogurt and fry for few minutes then stir into the Paya Curry. 3. Cover and cook on low heat for 20-30 minutes. Serving Suggestion. Garnish with chopped green coriander, green chillies and Shan Special Zafarani Garam Masala. Serve hot with naans or plain boild rice. Tips for Best Result. Boil cow's hooves in hot water for 15 minutes and throw the water before step No. 1. Serve 6-8 persons. Bagharay Paye©: 1. Follow the above recipe for Payas until step No.1 . When the payas are tender about 3 cups gravy should be left in the pot. 2. Heat the ghee and using three additional medium sliced onions, fry them until golden. Then add to the cooked Paya Curry. Stir and cook on low heat until ghee/oil separates from the gravy. Note: No yogurt will be used in this dish.
