Recipes

Steps of Cooking 1. Take 1 packet of shan achar gosht mix and dissolve in 1/2 cup water. Take 10 medium green chillies and slit them lengthwise. Mix 2 tbsp of shan achar gosht mix with 3-4 tbsp lemon juice. Fill the chillies with the mixture. 2. Heat 1 cup of cooking oil (175ml) and add 1kg (2. 2lbs) meat with bones - chicken/beef/lamb - cut into small portions. Add 1-2 tbsp shan garlic paste, 1-2 tbsp shan ginger paste, 2 1/2 cups (500g) of plain, whipped yogurt and the remaining shan achar gosht mix. Stir-fry on high heat for 7-10 mins. 3. Add 2-3 cups of water. Cover and cook on low heat until the meat is tender. 4. Grind and sieve 6 medium (500g) tomatoes to make a puree. Add the puree to meat mixture. Stir-fry for 5-6 mins on high heat and place the filled green chillies over the meat. Cover and cook on low heat until the oil separates from the gravy. If desired, remove excess oil before serving. Cooking Tip: For best results, use meat cuts from the shoulder and t-bone.
