Easy to Cook Hard to Resist! Aaloo Bhaji© Spicy Potatoes Curry Ingredients Required Quantity & Preparation Potato, peeled 1/2 kg, thin round slices Tomato 1 medium diced/70g Green Chillies, 1-2, chopped Green Coriander 1-2 medium, chopped Shan Aaloo 2-3 tablespoons Bhaji Curry Mix Steps of Cooking In 3-4 cup of water add potatoes, tomatoes and Shan Aaloo Bhaji Curry Mix. Cover and boil on medium heat until Potatoes are tender. Stir occasionally. Add green chillies & green coriander. Stir and mash few potatoes to thicken the gravy before serving. Serving Suggestion. Serve with hot Purees and Pickles. Chanay ki Bhaji© Chickpea Curry Chickpea/Chana 1 cup/200g soaked for 1 hour Onion 1 medium, sliced /100g Tomato 1 small, chopped Baking Soda 1 teaspoon heapful Oil/Ghee/Butter 3-4 tablespoons Shan Aaloo 3 tablespoons mix in Bhaji Curry Mix 1/2 to 1 cup of water Steps of Cooking 1. Boil the soaked chanas in 6-7 cups of water for 1-2 hours. Then add Baking Soda and cook for 1 hour or until the chickpeas are tender. 2. Heat ghee/oil and fry the onions until golden, add chopped tomatoes and stir/ fry for 2-3minutes. Add Shan Aaloo Bhaji Curry Mix in half a cup of water and add to the onion. Stir and fry for a minute. Add one cup of water. 3. Add this to the boiled chanas and boil on low heat for 15-20 minutes. Garnish with chopped green coriander and green chillies.
