Recipe Suggestion Dopiaza Harsh Duck Curry with Onion The dish gets its name because a double batch of onions are used, one in the initial fry, the other later in the cooking. Originating in Persia, it was a Moghul favourite. Lamb can be used in place of duck. Serves: 4 700g lean duck breast cut into 4cm cubes 3 tablespoons ghee 3 to 4 cloves garlic, finely chopped 150g copped onion, cooked until brown 250 ml fragrant stock or water 200g raw onion, sliced 2 tablespoons fresh coriander leaves, finely chopped 2 teaspoons White Pearl Garam Masala Salt to taste Masala 2 teaspoons White Pearl Coriander powder 1/2 teaspoon White Pearl Jeera powder 1/2 teaspoon White Pearl Haldi powder 1/2 teaspoon White Pearl Paprika powder 1/2 teaspoon White Pearl Chilli powder Add to water to the Masala to make a thin paste. Heat the ghee in a lidded casserole pot and stir-fry the garlic and the paste and stir-fry for a couple of minutes, until the oil 'floats'. Add the duck, cover and put into the oven, preheated to 190 C. After about 20 minutes, add the brown onion, stock or water, and oven for a further 20 to 25 minutes. Then add the raw onion, coriander and garam masala. Return to the oven for a final 20 minutes, or until the duck is perfectly tender and the liquid is reduced to a thick consistency. Serve with White Pearl Basmati rice.
