Recipe Suggestion Spicy Black Bean Soup (serves 4) Ingredients: 30ml Tropical Sun Olive Oil; 2 garlic cloves, chopped; 2 medium red onions, chopped; 2 jalapeño peppers (or green chillies), chopped; 2 tsp ground cumin, 2 x 400g tins Tropical Sun Black Beans (do not drain), 500ml Tropical Sun Chicken Stock or Vegetable Stock, 6 tbsp fresh coriander, salt and pepper to taste, soured cream, tortilla chips. Preparation: In a large saucepan, heat oil over medium-high heat. Simmer garlic for 1 minute. Add onion and jalapeño peppers. Simmer for about 3 minutes or until onion is tender. Add cumin and mix. Add Tropical Sun Black Beans and stock. Bring soup to the boil. Reduce heat and simmer for 10 minutes. Add 2 tbsp of coriander and mix. Allow soup to cool for 15 minutes. In a blender, purée small batches of the soup at a time. After all the soup has been puréed, return it to the same saucepan. Heat over medium-low heat. Add 2 more tbsp chopped coriander and mix. Season with salt and pepper. Ladle soup into bowls. Top bowl with a dollop of soured cream, tortilla chips and remaining coriander.
