Chicken & Chorizo Paella Serves 4 Ingredients: - 2tbsp Olive oil - 175g Chorizo sausage, sliced - 450g Chicken fillets, cut into chunks - 1 Onion, peeled and chopped - 1 Garlic clove, peeled and crushed - 1 Red pepper, deseeded and diced - 225g Spanish paella rice - 900ml Chicken stock - 100g Frozen peas, defrosted - 1tsp Ground paprika Method: 1. Heat the oil in a deep frying pan and fry the chorizo for 2-3 minutes. Remove from the pan and set aside. 2. Add the chicken to the pan and fry over a high heat until browned all over. Remove and set aside with the chorizo. 3. Fry the onion and garlic in the hot oil for 4-5 minutes until softened. Add the red pepper and rice, and cook for 1 minute. 4. Stir in the chicken stock and bring to the boil. Simmer for 15 minutes, stirring occasionally. 5. Return the chicken to the pan and add the peas. Season to taste and cook for 10 minutes, stirring frequently until the rice is tender and nearly all the liquid has been absorbed. 6. Add the fried chorizo to the pan and stir in gently. Cook for 4-5 minutes until heated through. Sprinkle with paprika and serve.
