Recipe Gorgonzola, leek and walnut wholewheat penne Serves 4 Ingredients 400g wholewheat penne pasta 50g butter 1 tbsp olive oil 3 leeks, sliced 1 garlic clove, chopped 100g frozen peas 1/2 lemon, juice only 100g crème fraîche 150g gorgonzola 100g chopped walnuts Method 1. Cook the pasta according to pack instructions and drain. 2. Melt the butter in a frying pan with the oil and fry the leeks and garlic until soft. 3. Add the peas, lemon juice, crème fraîche along with half of the gorgonzola and half of the walnuts, stir through and warm. 4. Mix in the pasta and transfer to an ovenproof dish. 5. Sprinkle the rest of the nuts and cheese on top and put under a hot grill until golden brown, serve immediately.
