Recipe Suggestion Eggplant Baked in Creamed Coconut (serves 4) Ingredients: 1 medium eggplant, 1 large onion, salt, Tropical Sun Ground Black Pepper, 1cup Tropical Sun Creamed Coconut, 1 red chilli. Preparation: Wash, peel and thinly slice the eggplant and onion. Alternately arrange eggplant and onion slices in an oven proof dish. Season with ground black pepper and salt. Add Creamed Coconut. De-seed and thinly slice the red chilli. Sprinkle it over the eggplant. Cover the dish and bake at 180ºC for 40 minutes. Remove cover and bake for a further 10 minutes.
